Out of transparency, I don’t cook too often. I mean yeah, I throw pre-made TJ’s meals in the oven or on the stove but when it comes to reeeeeal cooking, it just doesn’t happen anymore.
I LOVE to cook, I LOVE to grocery shop, hell, I LOVE FOOD. Unfortunately, time doesn’t allow many nights after I get done working, picking the baby up from daycare, and getting her in the bath and ready for bed by 7 PM. At that point, I’m just ready for something quick, a glass of wine or a beer, BravoTV, and my bed.
But these chicken tenders I have been making for years {recipe originally found on Pinterest and modified over the years} and you could never tell that they were actually “healthy.” The ranch that I drench them in on the other hand, ehh not so much but hey! life is all about balance. Any leftovers I throw on a salad the next day for lunch or just eat cold- also delicious.
Here is the other thing, I typically don’t measure any ingredients- I do my best work just winging it. However, just for you, I measured!
Ingredients:
- 1-1.5 lbs chicken tenders or sliced chicken breast
- 1 egg
- 1 cup almond meal (I get mine from Trader Joes but you can get at any major grocery store)
- 1 tsp Cumin
- 1 tsp Paprika
- 1/2 tsp Cayenne Pepper
- 1/2 tsp Garlic Powder
- Salt & Pepper

Instructions:
- In a bowl, mix together all dry ingredients
- In separate bowl, crack egg and beat
- Dip chicken tenders into egg then almond meal mixture
- Spray air fryer with cooking spray, add chicken, & spray again with cooking spray
- Cook at 400 degrees for about 12 minutes.

You could definitely throw these in the oven and bake too but if able, I would recommend air frying for that crunch! If you try these out- tag us and let us know how you like them!
