What’s For Dinner Wednesday- Greek Bowls

I found this recipe for a marinade on Pinterest and decided to give it a try. We used the chicken to make “greek bowls” and deconstructed a bowl for Nolyn, too!

Ingredients:

  • 1 lb chicken breast
  • 1/3 c. plain greek yogurt
  • 1/4 c. olive oil
  • lemon juice (recipe called for actually lemons but I added 1 tbsp lemon juice since that is what I had on hand)
  • 1 tbsp kalamato olive juice (this was NOT in the recipe but I decided to add it!)
  • 5 clove garlic
  • 2 tbsp oregano
  • salt & pepper

We added what we had at home to make our bowls: lettuce, brown rice/quinoa, diced cucumber, avocado, olive tapenade or diced kalamata olives, feta, grilled halluomi cheese

Instructions:

  1. Create marinade out of ingredients listed above
  2. Marinade chicken for at least 2 hours (I marinaded for approximately 5 hours)
  3. Cook chicken in Ninja Foodi, or instapot on HI for 12 minutes. You could also bake or grill chicken, as well!
  4. Slice and create your bowl!

It is seriously as easy as that! And delish!
