What’s For Dinner Wednesday {Baby Edition}- Turkey Meatloaf Muffins

This week I decided to throw up a favorite of Nolyn’s. Truth be told, Mike & I enjoy these a lot as well! They are healthy, you could easily throw in other veggies (onions, peppers, etc.) and top with ketchup if your little heart desires!

Ingredients:

  • 1 lb ground turkey
  • 1/2 cup pumpkin
  • 1/2 cup whole wheat flour (or any flour)
  • 2 eggs

Instructions:

  1. Combine all ingredients in a bowl
  2. Spray muffin tin with coconut/olive oil spray
  3. Divide meat mixture into muffin tin
  4. Bake at 350 degrees for 25 minutes

These are easy to freeze and reheat as well! Such a quick and easy dinner to throw together.
